This past week has been an odd week for me. My hubby started with the Houston Fire Department – so our whole world got shaken and stirred. Caleb was an amazing and very loved bartender here in our town waiting for his chance at HFD. It’s been such a long process, but I am so incredibly proud of him! He went from coming home from work at 4:30am to having to wake up to start his day at 4am. Quite a difference! So, naturally, I’ve been trying to do anything and everything I can to make his transition to the “normal” world easier. Eating out was almost an everyday routine for us – with his crazy schedule and my workaholic nature, cooking just hasn’t really been our number one priority. Cooking is something that I knew we would have to really rely on because unfortunately Caleb is taking a HUGE pay-cut leaving bartending behind and starting the fire department. So, I’m whipping out my apron, saving us some money, helping us eat better (hey anything is better than fast food) – I’m Betty Crocker-ing it!
My overall cooking experience went from a 2 to a 98237409134 this week. I made sure to cook every. single. night. It’s exhausting! I don’t know how all you people do it! I was completely unprepared for the week, so a daily trip to the store had to be squeezed in to my already packed to-do list. The store employees actually started to remember me.. On Friday as soon as I walked in an employee actually asked, “What can I help you find today?” haha! Does that let you know how clueless I am cooking? PS Who knew that pork shoulder could be called SO many different things?! Thank goodness for google..!
I naturally go to Pinterest when I am looking for a recipe. There are so many amazing food bloggers out there with great, fresh recipes! My Pinterest started to fill up with delicious recipes and before I knew it I had a menu ready for each day of the week! This week I am determined and prepared. I’ve already made my grocery list. I even categorized the list in sections: dairy, meats, canned goods, etc. – too OCD? :) Here is what I am pinning to help me cook (or attempt to cook) this week:
Slow Cooker General Tso’s Chicken from Creme De La Crumb – I am so excited about cooking in the crock-pot. SO EASY! I am trying to fit in two crock pot recipes each week so that I can have a little bit of a break from the kitchen and make sure I don’t get too overwhelmed. :)
Crab Rangoon Egg Roll from Pint-sized Treasures – Crab Rangoons are my favorite! I can’t eat asian food without some sort of cream cheese filled something or another. Okay maybe I just love cream cheese – but who can blame me?! I am cooking these with these General Tso’s Chicken.
Oven Roasted Turkey Breast from Pocket Change Gourmet – So, I’m thinking I make this turkey breast Monday with some yummy sides and Caleb will get to make sandwiches out of the leftovers for the next day or two.. win-win!
My Secret Weapon Sweet Potato Casserole from Frugal Living Mom – Remember those yummy sides I was talking about? This is one of them! Seriously drool-worthy. I will also be making a to-be-determined green to go along with the turkey and sweet potatoes.
Spaghetti Squash from Eat Within Your Means – I have been wanting to try spaghetti squash since I caught wind of it several months ago. I figure since I am taking a risk with the squash I’ll keep the rest of this meal simple: red sauce, meatballs, garlic bread, and salad. I see so many #pinterestfails with squash I want to make sure I can get it right. I think this guide will do wonders for me!
Slow Cooker Jalapeño Popper Chicken Taquitos from Creme De La Crumb – So I have to admit I scoured this blog – you have to check it out! Tiffany has created some amazing recipes and has her site SO incredible organized! These jalapeño popper taquitos look so tasty! I really hope that I can pull this one off!
Creamy Tomatillo Ranch from Creme De La Crumb – I, of course, HAVE to try this ranch to pair with my taquitos! Although, I’ve never had or heard of Cafe Rio – the sauce looks amazing! We love sauces so it is definitely worth a try! Plus it seems so easy!
